燉燕窩雙皮奶

Stewed Swallow Nests Milk Bean Curd

 

 

材料:

已浸發的燕窩一盞                               約一兩                                                     

鮮牛奶                                                   2 1/4杯                                                               

蛋白                                                             兩隻

蛋黃                                                             一隻

幼砂糖                                                      1/2杯

米醋                                                      1/4茶匙

做法:

1. 鮮牛奶煲至剛滾(不要過滾),分別盛入小碗內,待凍至表面結成一層奶皮,即從小碗邊沿戳一條縫,小心將奶傾出,奶皮留在碗底。

2. 蛋黃、蛋白打匀 (不要打至起泡) ,注入傾出的牛奶內,加入糖、米醋攪至糖溶,用篩濾入有奶皮的碗內,再加入燕窩,輕輕攪

拌。排放蒸籠內, 隔水蒸二十分鐘(用中旺火) ,蒸時將蒸籠蓋揭起兩次,可使表面平滑不會起縐紋。

 

Ingredients:

1 soaked whole swallow nest (approx. 1.33 oz)

2 1/4 cups fresh milk

2 egg white

1 egg yolk

1/2 cup granulated sugar

1/4 tsp rice vinegar

Method:

1. Parboil fresh milk until barely boiled. Transfer to small bowl. Allow to cool until a sheet of milk skin formed on the surface. Make a slit on the edge of bowl. Drain out milk carefully with milk skin left on the bottom of bowl.

2. Whisk egg yolk and egg white (don't over-

whisk to form bubbles). Fold in milk. Add sugar and rice vinegar. Stir until sugar dissolved. Strain milk with sieve. Transfer to bowl with milk skin. Add swallow nest into

the milk. Stir slightly. Put bowl into steaming basket. Steam for 20 minutes over medium heat. Uncover twice to obtain a smooth surface. Serve hot
